Mary's Most Moist Pumpkin Bread
My sister Mary's pumpkin bread is the most moist I've ever had. She's a science teacher and seems to have a knack for the chemistry of cooking.
Here's her recipe:
1 2/3 cup sugar
2/3 cup shortening
1 16 ounce can pumpkin
2/3 cup water
4 eggs
3 1/3 cup flour
2 teaspoons baking soda
1 1/2 teaspoon salt
1 teaspoon cloves
1/2 teaspoon baking powder
1 teaspoon cinnamon
Preheat oven to 350 degrees.
Grease bottems only of two 9x5x3 inch loaf pans or three 8 1/2x4 1/2 loaf pans.
Stir together dry ingredients.
Cream together other ingredients.
Combine all ingredients.
Bake for 60 to 70 minutes.
Test with a toothpick...if it comes out clean...the bread is done!
