Sausage and Potato Egg Bake

We also call this...

...our Christmas morning egg bake.
It's so simple to put together a day or two ahead in advance and refrigerate. You can even do it way ahead and freeze it. We pop it in the oven before we start opening presents and by the time we're done we've got a hot, heart breakfast waiting for us.


Ingredients:
1 pound pork sausage (I use Jimmy Dean)
2 plus cups of hash browns
3 Tablespoons butter melted in skillet
1 cup Swiss or jack cheese
6 eggs beaten
2 1/2 cup milk
1/2 teaspoon salt

Preparation:
1. Cook sausage, crumbling. drain grease.
2. Cook hash browns in butter until they are tender and browned
3. Mix beaten eggs with milk and salt.
4. Put sausage on bottom of greased shallow 2 quart casserole dish
5. Put hash browns on top of sausage.
6. Put cheese on top of hash browns.
7. Pour egg mixture on top of all.
8. Sprinkle with salt and pepper
9. Bake at 350 degrees for 45 to 50 minutes or until set (longer if frozen)



Cook sausage, crumbling.

Be sure to cook it all the way through.


Cook hash browns in 3 Tablespoons of melted butter.


Hash browns should be tender but well browned. Yum.



Beat eggs.


Add milk and beat.


I almost forgot the salt. And, actually, I don't think I beat the eggs well enough.

Pour sausage into buttered shallow casserole dish.

Spread it out nice and evenly.

Then layer it with ...

...the hash browns.

Sprinkle the cheese over the hash browns.

Pour the egg mixture on top of all of it. See, I think the eggs should have been beaten more. I can see yolk. I don't like that.

This is what it will look like before you put it in the oven. Cover and refrigerate overnight. Can be frozen.

Bake at 350 degrees for 45 to 50 minutes or until set (longer if frozen).

  2. Yum! That looks delicious and very easy. It's too bad we're watching cholesterol intake. But it does tempt me to make my Overnight Coffee Cake or Applesauce Muffins for Christmas morning! Thanks for the idea.

  3. I LOVE egg bake!! However, I must say that your recipe sounds a bit better than mine...even if it is a little more un-healthy!!!!! :) It's Christmas time, right...enjoy in moderation?!?! ;)
