"Colors of the Season"

Enjoying the bounty of the season.

It's the best part of summer.

It's not unusual for me to build a meal around whatever looks good at the produce stand I pass on the way to the lake.

On this night I made pasta tossed with sauteed fresh tomatoes and basil. It's super easy.
Blanch a few fresh tomatoes by dipping them briefly in boiling water.
When cool enough to handle, peel.
Chop tomatoes. Saute with some chopped onion in olive oil. Add some chopped basil when the tomatoes are starting to get tender. Don't let tomatoes get too soft or mushy.
Toss tomatoes and pasta together.
Sprinkle with Parmesan and garnish with fresh basil.

I also cooked up some other veggies that looked too good to pass up.

Fresh carrots.


Fresh peas.


And golden beats.
I love beets.


"Colorful meal!" my daughter's friend said.
She noticed. And made my night.

"Sweet Corn Takes the Cake"

The number one favorite veggie?

Sweet corn. At least among readers who entered this contest.

Just reading the entries made me salivate: beans, sugar snap peas straight from the garden, carrots, broccoli, tomatoes (I still think of them as a veggie, too), even collard greens, which I love. I can't think of a vegetable that I don't like. Well... maybe eggplant. Depends how it's prepared.

The winner of the drawing is Lori in MN. Her faves are Minnesota grown peaches (didn't know they grew them here) and cream variety sweet corn. I don't know what that variety is, exactly, but it sounds to die for.
