"Cucumber and Cream Cheese Sandwich"

My favorite lunch at the lake is a cucumber and cream cheese sandwich. It's quick. It's cool. It's light and delicious.

Perfect to carry to the dock or the boat.
I start with fresh whole grain bread from Rachel's Bakery in Nisswa.
I slather it with organic cream cheese.
Top with thinly sliced cucumbers.
Sprinkle liberally with salt, pepper and fresh dill.

It's that simple. Healthy, too.
