This is my very favorite quick and cool meal for a hot summer day.
Lettuce, cottage cheese (low fat if you prefer) top with sliced peaches or nectarines. I added blueberries to make the salad look like a flower and because blueberries are so darn good for you. Drizzle with extra virgin olive oil. Sprinkle with salt and pepper to taste.
How's that for easy?
